Ingredients:
1 Onion, diced
3 Chilies in Adobo
1 1/2 Cups Ground Veggie Meat (Gardein or similar)
1 tsp Cumin
1 tsp Garlic Powder
4 cans Assorted Beans
1 can Olives
1 can Corn
1 can Tomatoes
2 packets Taco Seasoning
1 cube Veggie Bouillon
8 cups Water
Optional toppings:
Salsa
Cilantro
Diced acocado
Vegan cheese
Vegan sour cream
Tortilla strips
Directions:
Sauté onion, ground veggie meat, chiles, cumin, and garlic powder in large pot. Add remaining ingredients and heat on medium for 10 minutes. Reduce heat to low and simmer for 30 minutes. Serve with toppings and enjoy!
